Roasted Beet Tortellini Salad with Blueberries and Goat Cheese 
Tomorrow morning we are heading out to Virginia Beach for our annual 4th of July family vacation with Barb, Jerry, and co. One of my favorite things to do (besides hitting the beach) is sitting at Barb's kitchen table sipping on a hot cup of coffee and perusing through her extensive recipe collection. She loves to cook and is always on the lookout for something "new" and "different." Last year she made a Roasted Beet Tortellini Salad with Blueberries and Goat Cheese Salad that I couldn't help but take an extra serving of every time it got passed around the table. I can't wait to see what she'll be serving up this year, without a doubt her famous pumpkin bread will be sitting on the stove awaiting our arrival.

Good friends, good food, and Baylake Pines Beach have become our favorite recipe for a 4th of July family vacation. What are your plans for this holiday weekend?

Whole Foods opened up across the street from our neighborhood. Like, literally, across the street. It has been a long time coming and highly anticipated, so when they finally opened their doors, I went THREE times on the first day! The ever-changing salad bar is our bank account's downfall. She has very good taste in EVERYTHING so I knew I had to try it after she raved one night before stepping out on the field. Easy to make and bursting with flavor, this fresh fish dish is a keeper!
