Gypsy Sweetheart's Mexican Eggs

Starting freshmen year, I spent my high school summers in Ogunquit, Maine nannying for family friends who also happen to be the owners of Gypsy Sweethearts. Back then Gypsy's used to be open for breakfast and my absolute favorite thing to order was their Mexican Eggs. Just thinking about this piping hot dish with a dollop of cool sour cream makes my mouth water.

If you find yourself in Ogunquit, I highly recommend stopping by Gypsy's for dinner. They still have my all time favorite on the menu: Almond Crusted Baked Fillet of Haddock. In the mood for a cocktail? Gypsy's has the best lounge in town!
